Who is Kelly's Chicken?

This scenario describes how a large company (25,000 employees in more than 200 restaurants nationwide) implemented Lawson Security. This scenario builds on previous scenarios while describing a customer who makes use of some specialized Lawson Security features.

Kelly's Chicken is a fast-food restaurant that has gone through a major expansion in the past ten years. Starting out with one beach hut restaurant specializing in grilled chicken sandwiches in Venice Beach, California, in 1982, the company has grown, through franchising, to more than 200 restaurants throughout the United States.

What Lawson products does Kelly's Chicken use?

Kelly's Chicken uses Lawson's AP product. Accounting responsibility is at the region level. Each region has an accounting department to handle accounts payable. The general manager of each restaurant forwards account payable data to the regional office.

Kelly's Chicken organizational structure

Kelly's Chicken is organized by a system of regions that stand for parts of the country with the following divisions:

  • Northeast

  • Southeast

  • Midwest

  • Southwest

  • West

Within each division, the company is further divided by regions. Regions are typically, states, but are sometimes cities, and other structures. Illinois provides an example: Illinois falls in the Midwest division which includes the states Illinois, Indiana, Iowa, Minnesota, Nebraska, and Wisconsin. Each of these states is a region. In Illinois' case, there are three regions within the state: Chicago Loop-North, Chicago South, and Outstate Illinois, all functioning as independent regions.
